Adrenaline and Cortisol

I forgot to mention that regardless if bred for racing or not, levels of adrenaline and cortisol produced by equines are far greater than any legal levels found in any other meat harvested for human consumption.  As well, the manner in which horses are slaughtered maximizes the production of adrenaline and cortisol.  This unto itself imposes serious risk to human health and worthwhile to bring to the attention of legislators so that they are not confused that it is only racehorses that risk health concerns in the mass production of horse meat.  Organizations like ALDF and HSUS are doing good work but with a tendency to place emphasis on racehorses.  This can be amended with the option to add or edit comments in the pre-written letters to legislators which may also include remarks that address issues of animal cruelty.
